Summer Companion
"That time of year has come again... I drag the grill to the front of the restaurant and, right by the Sea, where I have always been, I open the door to all who appreciate a beautiful grilled dish, fresh, caught that day, from our Sea."
The customers start arriving, the regulars, the friends, and those who come for the first time.
This year I have a new helper at the grill, who doesn't mind getting stained, dirty, catching a bit of charcoal, or even protecting me when the fire decides to flare up.
A helper who, with me, keeps an eye on the sea bass that is almost ready, there on the left, or the squid skewer, or those peppers that are already asking for a drizzle of olive oil, to go to a table eagerly awaiting their arrival.
A tough helper, immune to tears or cuts, and that now and then attracts a look of appreciation, or even a comment on the look that together we give to this our art of good service.
That apron which, at the grill, in full view of all the customers, is also part of the stage of our restaurant.
At the end of the day, it's there to help me close up, and the next day it never fails to accompany me when we open.
This is the perspective of someone at the grill of a seaside restaurant on a summer day.
This Summer don't neglect a good apron!
